2 cups sugar
1/2 cup oil
2 eggs
4 cups diced granny smith apples
2 cups flour
1 tsp salt
2 tsp cinnamon
2 tsp nutmeg
2 tsp baking soda

Directions:
Directions:
Combine sugar, oil and eggs.
Add apples
Sift together the dry ingredients and add to apple mixture.
Pour into a 9" x 13" greased cake pan and bake for one hour in preheated oven at 350º

This is the same as the Apple Hill Cake recipe from Apple Hill, CA, except I have doubled the nutmeg in my recipe.
I also make a gluten free version, using Bisquick Gluten Free pancake and baking mix. Simply substitute the same amount of gluten free mix for the flour. Turns out very good!
