1-2 cups of leftover mashed potatoes
1-2 cans of salmon
1 chopped onion
2 eggs
1 cup flour
1 teaspoon salt and pepper to taste

Directions:
Directions:
Mix all ingredients together, have a small plate or bowl with flour off to the side to flour your hands to make patties. Heat a pan of oil, fry on each side 5-7 minutes or to a golden brown on medium high heat, use your discretion or bake in oven at 350*- 375* 8-10 minutes, each side to a golden brown, again use your discretion. I prefer the oven cause when you fry them they absorb a lot of oil. So if you fry them 3-5 minutes on medium high heat add enough oil to cover the bottom, plus you may have to add oil depending on the amount.
