1 1/2 C. finely crushed graham crackers
1/4 C. melted butter
19 oz. cream cheese
1 1/2 C. sugar
3 T. flour
1/2 t salt
6 eggs, separated
1 pint sour cream
1 t. cream of tarter
1 t. vanilla extract (DO NOT USE IMITATION VANILLA)

Have all ingredients at room temperature. Generously butter a 10 inch springform pan. Make a collar from aluminum foil by taking a piece of aluminum foil that is long enough to wrap around the pan. Fold in half and cover one side with butter. Wrap around the pan, buttered side facing inward. Preheat oven to 325. Place a pan of water on the lowest level of the oven.

Mix graham crackers and butter well. Press mixture firmly into bottom of pan and set aside.

In a large bowl, mix together cream cheese, 1 1/2 C. sugar, flour and salt. Add egg yolks one at a time, beating thoroughly after each addition. Add sour cream and vanilla. Mix well.

Beat egg whites with 1 t. cream of tarter and gradually add 3 T. sugar. Beat until stiff. Gently fold egg whtes into cheese mixture and pour mixture into pan.

Bake in preheated 325º for 1 hour and 30 minutes. When cake is evenly brown on top and done, turn off heat, open oven door and let cake sit in oven 15 minutes. Remove cake from oven and let cake cool away from drafts. The cake will shrink back into pan as it cools. After it cools, refrigerate overnight. Cake should be served cold.

The collar around the pan keeps the cake from rising above the pan and falling apart. This will insure that your cake is beautiful and moist.
