1 3/4 cup Red Mill One to One Flour
2 cups sugar
1/2 cup Brown Sugar
3/4 cups cocoa powder
2 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup oil of choice
1 cup strong coffee
1 cup buttermilk
1 tsp vanilla

Preheat oven to 350.
In a large bowl, whisk all the dry ingredients together making sure to get rid of all lumps. In a separate bowl whisk all wet ingredients, making sure to incorporate the eggs. Add wet ingredients to dry ingredients bowl and blend. The mix will be very soupy. Fill 2/3 full (use cupcake liners) and bake for 30-45 minutes, or until it passes the toothpick test. Let it cool for about 30 minutes before removing from pan. Ice as desired and enjoy
