10 large baking potatoes peeled and cut in 1 inch cubes
6 cloves garlic
8 T. butter
2/3 c. milk
3 oz. cream cheese, at room temperature
2 eggs, beaten
1/2 c. ,minced chives
1 1/2 tsp salt
1/2 tsp ground white pepper

In a 4 quart saucepan, cover potatoes and garlic with water. Bring to boil over medium heat, reduce heat to low and shimmer until tender (about 30 minutes). Drain potatoes. Mash the potatoes in the pan. Stir in butter, milk, cream cheese, eggs. chives, salt and pepper until well blended. Serve at once or store in a lidded over proof casserole in the refrigerator for up to 2 days or 2 weeks in the freezer. If stored heat in 350º over and serve.
