1 package Bear Creek Potato Soup Mix
4 cups water
2 cups clam juice
5-6 slices bacon, coarse dice
1 medium sweet onion (Vidalia or Walla Walla), medium chop
1 1/2 - 2 cups coarse ground razor clams*
half and half cream
parsely to garnish
*can substitute 3 small cans combination of chopped and minced clams. Drain and rinse.

Combine water and clam juice and bring to a boil. Add packaged soup mix and cook as per soup mix instructions.

Fry bacon and chopped onion together until bacon is almost crisp and onion translucent. Add the clams; continue to stir until just heated through.

Add bacon, onions, and clams to the soup.

Continue to heat. Add cream if desired. Serve with a sprinkle of parsley.
