Crust
1¾ C. graham cracker crumbs
⅓ C. butter, melted
1 T. sugar

Filling
3 (8oz.) cream cheese, room temperature
1¼ C. sugar
3 eggs
1 T. vanilla
½ C. fresh lime juice( if you choose to use key limes or juice, use half as much. I suggest you not. Plain lime juice is plenty tart for my taste)
Cool Whip for topping

Make the Crust
1. In a large bowl, mix the graham crackers and sugar.
2. Slowly pour in the butter. Mix crust ingredients until the butter is evenly distributed.
3. Prepare a greased 9-inch spring form pan by wrapping aluminum foil around the outside bottom to prevent leakage from the water bath.
4. Press the graham cracker mixture into the bottom and sides of the pan.

Make the Cheesecake Filling
1. Preheat oven to 350º.
2. In a large bowl, beat the cream cheese with an electric mixer on low speed.
3. Gradually beat in sugar, and vanilla until smooth.
4. Add eggs and lime juice and continue to beat until the mixture is smooth and creamy.
5. Pour the cheesecake filling into the spring form pan.
6. Place the spring form pan into a pan with ½ inch water to create a water bath.
7. Cook at 350º for apx. one hour or until the top is golden brown.
8. Cover and place in the refrigerator to cool for four hours or more.
9. Top with Cool Whip.

This is blatantly copycatted from a recipe from The Cheese Cake Factory. It is one of Kelsey's favorites. I have tried doing this without the water bath and trust me; it is worth the small effort to do the water bath method mentioned here. It is what makes the texture right for a proper cheese cake.
Deb's note: I prefer the key limes with homemade whipped topping!!
