1 cup fresh packed cilantro leaves...
1/2 cup fresh packed mint leaves...
1 T fresh lime juice...
1 fresh jalapeņo chili pepper, quartered and seeded...
1 clove of garlic, quartered...
2 T grated Parmesan cheese...
8 slices of thin whole-wheat or white bread, crusts removed...
3 T soft butter...
8 thin slices of Provolone cheese...
1/2 of an English cucumber, sliced thin, I use a mandolin to be sure all slices are the same...

Directions:
Directions:
In food processor, combine cilantro, mint, lime juice, jalapeņo pepper and garlic, cover and process until finely chopped...
Place this mixture in a small bowl and add the Parmesan cheese and mix well, put aside for flavors to blend...
Spread one side of bread with butter and a slice of Provolone cheese and do the same with 3 other slices of bread...
Top the other slice of bread with the with the cilantro mixture and cucumber, now place the Provolone and butter slice on top of the cucumber slice of bread, slice of an angle and place on a serving tray...
