Turkey carcass
12 cups water
1 tsp salt
1/2 tsp pepper
1/4 tsp dried sage leaves
1 dried bay leaf
1/2 cup uncooked pearl barley
3 medium carrots, 1 1/2 cups
1 large onion, chopped, 1 cup
2 medium celery stalks
3 cups cooked turkey
2 tbsp fresh parsley, chopped

Break up turkey carcass to fit in 6 qt dutch oven. Add water, salt, pepper, sage and bay leaf. Heat to boiling over high heat, reduce heat to low. Cover and simmer for 1 hour 30 minutes.

Skim off any residue that rises to surface. Remove bones, meat and bay leave from broth, cool. Remove meat from bones and cut into bite size pieces, set aside. Add turkey meat to broth, stir in barley, heat to boiling, reduce heat to low. Cover ad simmer for 30 minutes, stirring occasionally.

Stir in carrots, onion, celery and 3 cups cooked turkey. Simmer uncovered 20-25 minutes , until vegetables are tender. Stir in parsley.
