1-2 lb beef shank
1/2 celery leaves
2 tbsp snipped parsley
1 tbsp salt
2 tsp worcestershire sauce
1 bay leaf
1/4 tsp crushed thyme leaves
8 cups water
1/2 cup pearl barley
1 cup diced turnip
1 cup sliced carrots
1/2 cup chopped onion
1/2 cup diced celery
1/2 tsp salt
1/4 tsp pepper

Directions:
Directions:
Place beef shank in a large pot. Add celery leaves, parsley salt and worcestershire sauce, bay leaf, thyme and water. Cover, bring to boil and simmer for 2 hours. Remove bones cut off meat and dice. Set meat side. Strain broth, skim off excess fat. Return broth to pan. Add barley, simmer, covered for 1 hour. Add meat, turnip, carrots, onion, celery, salt and pepper. Simmer for 30 minutes. Serve
