1 cup dry red wine
1-1/2 tsp. dried oregano
1-1/2 tsp. fennel seed
3 bay leaves
1 piece filet of beef (tenderloin) about 6-8 oz. per person
Olive oil
Kosher Salt
Freshly ground black pepper
1/4 butter cut into 8 pieces

Combine wine and next 3 ingredients and pour over beef. Marinate at room temperature for 3-4 hours, turning occasionally. Preheat oven to 450º. Remove beef, strain and reserve 1/4 cup marinade. Pat beef dry with a paper towel. Rub with olive oil. Season well with kosher salt and pepper. Roast beef on a rack in a shallow pan at 450º F until internal temperature reads 130º - about 30-40 minutes depending on thickness of meat. When beef is done, remove it from the oven and cover with a tea towel/thin towel. Let rest while making sauce.
In a heavy saucepan, cook reserved marinade over high heat until 2 T. remain. Remove from heat, stir in butter 1 piece at a time. As mixture cools, return to very low heat until all butter is incorporated. Do not allow sauce to get too hot or it will separate. Slice meat and spoon 1 T of wine sauce over each serving.

When purchasing an expensive cut like this, have the butcher trim a new tenderloin - ask for CENTER CUT only with no fold overs.
