3-4 lb. Chuck Roast
Garlic – 2-3 cloves
Flour
2 T. Vegetable Oil
Carrots
1 Onion
3 Cloves
2 cups Beef Stock
Bay Leaf




Directions:
Directions:
Smash garlic. Rub meat with garlic then dredge in flour. Heat 2 T. of oil in large heavy pan preferably an Iron Pot. When oil is hot, brown meat on all sides in oil. Add carrots, onion stuck with 3 cloves, boiling beef stock and bay leaf. Season with salt and pepper.

Cover and bake 3-4 hour at 300˚-325˚ oven or simmer on top of the stove. Turn meat several times, season to taste. If necessary add more stock or wine.

Cooking time is typically 4 hours.
