2 T. lemon juice
2 small red delicious apples, cored & diced
1 c. diced celery
1/4 c. dark raisins
2 T. plus 2 tsp. reduced-calorie mayonnaise
4 iceberg or romaine lettuce leaves
1 T. plus 1 tsp. sunflower seeds

Directions:
Directions:
In small mixing bowl, sprinkle lemon juice over apples and toss lightly to combine. Add celery, raisins, and mayonnaise and mix until thoroughly coated. Cover with plastic wrap and refrigerate for at least 30 minutes.

To serve, line 4 salad plates with 1 lettuce leave each; top each with an equal amount of apple mixture and sprinkle each with 1 tsp. sunflower seeds.
