Ingredients: 18 pieces of cold cream cheese, (1 by 1/4 inch).... 18 pitted dates, preferably Medjool... 18 salted and roasted whole almonds... 6 slices of bacon cut in half or thirds...
Special equipment....18 wooden picks, soaked in water for 30 minutes prior to placing around dates....

Directions:Preheat oven to 400º... Stuff a piece of cream cheese and an almond into each date... Wrap a piece of bacon around the date and secure with wooden pick... Arrange dates with bacon seam side down on a cooling rack that is placed on a baking rack... Bake 10 minutes in oven, turning bottom side up after 5 minutes, this is done so both sides of bacon cooks.... Drain on paper towels for 3 minutes and serve... Very hot when first out of oven, be careful when biting into and also remind guests that the date is pitted… |
