2 T. unsalted butter
3 eggs
¾ C. milk
½ C. flour
¼ C. light brown sugar
1 tsp. vanilla
¼ tsp. salt
½ T. granulated sugar
1 tsp. cinnamon
1 banana, peeled and sliced into 1/4 inch slices

Combine eggs, milk, flour, light brown sugar, vanilla, and salt. Whisk until frothy. Melt the butter in the DO and then pour in the pancake batter. Slice the banana in ¼ inch slices and place evenly on top of the batter. Sprinkle the white sugar and cinnamon on top and put the lid on. Place 11 briquettes on bottom and 13 on top and cook for 20 minutes.

Yep, singular. One pancake. Deb and I have never been able to eat the whole thing. We did this in our Dutch oven per recipe and it was awesome. More like a crepe than a pancake. The batter is very soupy and it turned out lite and fluffy, fruity sweet instead of confection sweet. You will need Debs recipe for maple syrup or as a last resort go buy some of that plane old store bought stuff.
