Flour tortillas (8-16, depending on size)
1 medium onion
1 Tbsp. vegetable oil
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. ground cumin
1 (8-oz.) pkg. cream cheese
6 c. shredded cooked chicken
3/4 c. salsa
1 1/2 c. shredded cheddar
2 cans enchilada sauce

Preheat oven to 350º F.

Heat oil over medium heat and add onion. Cook until soft. Stir in chili powder, garlic, and cumin (can also just use taco seasoning for ease...). Turn heat down and add cream cheese, breaking up and stirring till melted. Stir in shredded chicken and salsa. Cook for 3-5 minutes.

Remove from heat and stir in 1 cup of cheese. Heat tortillas in microwave for 30 seconds or until soft and pliable.

Spray 9 x 13 dish with nonstick spray. Spread 1/4 - 1/2 c. of enchilada sauce over the bottom of your baking dish. Spoon filling into tortillas, roll from bottom up and arrange in baking dish seam side down. Top with the rest of the enchilada sauce and cheese.

Bake for 15-20 minutes, or until cheese starts to bubble.

Top with black olives or jalapeno peppers.
