1 peck green tomatoes, sliced
12 large onions, sliced
1 c. pickling salt

3 qt. vinegar
12 green peppers, sliced thin
6 red peppers, sliced thin
4 lb. brown sugar
1 Tbsp. dry mustard
1 Tbsp. salt

Tie in a cloth bag:
2 Tbsp. whole cloves
2 sticks cinnamon (3 inches each)
2 Tbsp. powdered ginger
1 Tbsp. celery seed

Directions:
Directions:
The night before put green tomatoes, onions, and pickling salt in a large container (not aluminum) and let stand, refrigerated for 12 hours. Rinse with clear water.

Heat vinegar, add green and red peppers, brown sugar, dry mustard and salt. Add tomato mixture and cloth bag with spices.

Bring to a boil, then simmer until tomatoes are transparent, stirring frequently, about one hour. Place the pickles in sterile jars and seal. Process in boiling water bath, 15 minutes for pints.
