1/3 cup vegetable oil
1 cup sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 tsp. salt
1/2 tsp ground cinnamon
1 cup mashed ripe bananas (2-3 medium)
1 cup grated carrots
1/2 cup chopped pecans

Directions:
Directions:
In mixing bowl combine oil and vinegar. Add eggs; mix well. Combine flour, baking, soda, salt, cinnamon; gradually add to creamed mixture alternating with bananas. Transfer to a greased 9"x13" loaf pan. Bake at 350 degrees for 55-65 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes before removing from pan to wire rack to cool.
