3 lg. boneless chicken breasts
1/4 C. Butter
1 Onion, chopped
3 stalks celery
1/2 bell pepper, chopped
1 lb. smoked sausage
1 lb. shrimp, peeled and deveined
1 can Rotel or stewed tomatoes (14 oz. can)
1 C. water
1 C. Minute Rice
Tabasco Sauce, to taste
1 t. Cajun Seasoning

Directions:
Cook chicken, onion, celery and bell pepper in butter until crispy. Add smoked sausage, tomatoes and water. Bring to boil. Add shrimp, rice, tabasco and Cajun seasoning. Simmer until done. This can be doubled to feed an Army!
