2 c of flour
1/3 corn meal
1/3 c chilled butter or margarine cut into small pieces
1 c mashed cooked sweet potatoes
1/2 c milk
2 T honey

Directions:
Directions:
Preheat oven to 400º. Lightly spoon dry ingredients into a bowl and cut in the butter using a pastry blender, two knives or I just use my hands like the old fashion way, until it looks like coarse meal. Add the potato, milk, and honey and stir until just moist, do not over mix. Turn out the dough onto a heavily floured surface and knead only about five times. Pat into a 9 inch square and cut into 12 -16 squares. Place on a baking sheet. Bake for 20 min. until golden brown. Serve warm alone or with honey butter. Goes well with most dishes/

I love baked sweet potatoes. I can eat them and nothing else for my dinner. When you bake or cook extra, save 1 or 2 to try this recipe. Do not use canned yams.
