1 pound hot Italian sausage, cooked by directions on the package. Note: you will only need 2 and half of the links for a lighter soup.
1 large onion chopped
2 cans of chicken broth
1 qt. of water
2 garlic cloves, minced
1/2 c real bacon bits (optional)
salt and pepper
2 c chopped kale
1 c heavy cream

Prepare the sausage as it says on the package.. You can fix all of it or half. Drain on paper towels and slice into coins. Place the potatoes, onion, chicken broth, water, garlic in a pot on med heat until the potatoes are tender. Add the slice sausage, bacon bits, salt and pepper to taste and simmer for about 10 min. Wash the kale and remove any tough stems. Add the kale, cream and extra water if necessary. Heat thoroughly and serve.

I usually like it lighter, so I fix all of the sausage at once, but I only use half for the soup and I freeze the rest and save for the next batch of soup. It is good with cornbread or any type of bread or cracker that you like. It is just perfect by itself.
