2 sheets ready puff pastry
1 can salmon
1/2 large leek, thinly sliced
1/3 cup grated cheese
2 tbsp. flour
A good knob of butter
Milk or white wine
1 egg, beaten
Salt & pepper to taste.

Pre-heat oven to 200c. Line a shallow dish with baking paper and then cut one sheet of the puff pastry in a circle to fit the dish. Cut the other sheet to fit on top. Meanwhile heat the butter and gently sweat the leeks until nice and soft, add the flour and stir to a paste then add the milk or wine constantly stiring until it becomes a white sauce. Remove from the heat and stir in the cheese. Allow to cool somewhat. Now take the can of salmon, drain, remove any bones and skin. When the sauce has cooled down, spread half over the pastry base, put salmon on top then cover with the remaining sauce. Brush the edges with the beaten egg and place the other sheet of pastry over crimping the edges to seal. Brush the egg over the upper sheet to glaze. Bake for about 30 minutes or until the top is nicely browned. Serve with a side salad.
