1 1/2 cups flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 cup sugar
1/2 cup packed brown sugar
1/2 tsp. cinnamon
1/2 cup chopped nuts (I prefer walnuts)
2 eggs, beaten
1/2 cup vegetable oil
1/2 cup mashed banana
1 tsp. vanilla

Preheat oven to 350º

Mix flour, baking soda, baking powder, sugar, brown sugar, cinnamon and nuts in a bowl. In a separate bowl, combine eggs, vegetable oil, bananas and vanilla, mixing well. Add wet ingredients to the dry ingredients and mix well. Pour into a nonstick 5x9 inch loaf pan. Bake at 350º for about 55-65 minutes or until loaf tests done. Remove to a wire rack to cool.
