3 ripened Roma tomatoes, chopped
I shallot, minced
2 large garlic cloves, minced
2 tbsp chopped fresh basil
11/2-2 tbsp olive oil
Salt/pepper

Softened goats cheese
Baguette, sliced and toasted on both sides

Directions:
Directions:
Combine tomatoes, shallots, garlic, basil and olive oil. Season with salt and pepper. Let sit for a few hours. Spread baguette slices with goats cheese and top with tomato mixture.
