Ingredients:  
•1 medium sized onion, finely diced
•3 tablespoons butter
•3 tablespoons flour
•1 cup veggie broth
•2 cups milk
•2 medium zucchinis, grated
•1 medium carrot, grated
•salt and pepper, to taste

Directions:
Directions:
1.In a large saucepan, saute' the onion in the butter for 5-7 minutes, until the onion is tender.
2.Stir in the flour until combined, cook for 1 minute.
3.Stir in the broth, milk, salt and pepper and bring to a boil. Reduce heat.
4.Add the zucchini and carrot and cook for 5 minutes until veggies are tender. Make sure to stir often so the soup doesn't scorch.
