4c all purpose flour
2/3c sugar
1 Tbsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4c dried currants
3/4 c shredded cheese
1c buttermilk
3 eggs

Directions:
Directions:
Preheat oven to 325. Coat large baking sheet with cooking spray or parchment paper. In a large bowl combine flour, sugar, baking powder, soda, salt,currants and cheese. Stir in butter, milk and 2 eggs until dough forms.

On a generously floured surface, knead dough until smooth~ about 2 minutes. Divide dough into 10-12 evenly sized pieces. Shape each piece into a round loaf. Place 2-3 inches apart on baking sheet. With kitchen scissors or serrated knife, cut 1/2 inch deep"x" into the top of each loaf.

Lightly beat remaining egg and brush over tops of dough. Bake 25 minutes until loaves are golden and sound hollow when tapped on the bottom.
