2 12-oz cans whole corn mixed with red and green peppers, drained
1 2/3 cups milk
3 eggs, well beaten
1/3 cup finely chopped onion
1/2 cup grated cheese
1 3/4 cup crushed cheese crackers

Directions:
Directions:
1. Combine corn, milk, eggs, onion, cheese, and 3/4 cups cheese crackers in an 8x8x2 microwave oven-proof glass or ceramic dish.

2. Place in microwave. Cook at medium (50%) power for 15 minutes. Stir casserole.

3. Mix 1 cup cheese crackers with melted oleo. Sprinkle evenly on top of dish.

4. Cook 14 mins longer at 50% power.

Recipes serves 6 to 8.
