Pumpkin Roll Recipe

3 eggs
1 cup sugar
1 tsp lemon juice
2/3 c pumpkin
3/4 c flour
1 tsp baking powder
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt

1 cup powdered sugar
6 oz cream cheese
1/2 cup butter
1/2 tsp vanilla

Beat eggs together for 5 minutes add sugar, lemon juice, pumpkin and all dry ingredients. Spread into greased jelly roll pan and sprinkle with nuts (optl)
Bake for 15 minutes at 375.
Turn out onto cheese cloth sprinkled with powdered sugar.Roll up and let cool.
Carefully unroll spread on frosting and roll back up without cheese cloth.
