3 cups Rolled Oats
2 cups chopped macadamia nuts, lightly toasted
1/3 cup dark brown sugar
1/3 cup vegetable oil
1/3 cup real maple syrup
1 teaspoon ground cinnamon
1 teaspoon vanilla
3/4 teaspoon salt
1 cup dried cranberries

Preheat Oven to 250º. In a large bowl, combine the oats, nuts, brown sugar and cinnamon. In a large measuring cup, combine salt, vanilla, oil, and maple syrup. Pour into the oat mixture and mix well. spread onto two foil-lined sheetpans and baked for 1 hour and 15 minutes, stirring every 15 minutes.
Remove from the oven and place granola in a large bowl. Add dried cranberries and mix well. Allow to cool and store in air tight containers.

this recipe can be so easily modified to use whatever you have available; you can use and nuts you like, and use raisins instead of dried cranberries. Coconut (shredded unsweetened) and other dried fruits would be nice in this as well. You could also add other spices in addition to the cinnamon-nutmeg, allspice, clove, etc.
