8 to 9 zucchini, sliced thin
3 cups bread crumbs
1 cup grated Parmesan cheese
1 tbs. granulated garlic
1/4 cup fresh oregano
1 1/2 tsp. salt
1 1/2 tsp pepper
5 to 6 eggs, beaten well

Directions:
Directions:

Mix all the dry ingredients (except bread crumbs) together, Dip the sliced zucchini into the eggs, roll them in the bread crumbs. Fry in a deep frying pan until golden brown, place on a platter with paper towels for a few minutes, transfer onto a plate and serve. Option: you can also use artichokes in a can or jar to replace zucchini. Drain water and squeeze the water out of the artichokes, then follow the recipe.
