8 Red bell peppers
1/4 cup chopped parsley
3 to 4 clove garlic , minced
1/4 cup olive oil
3 tbs balsamic vinegar
1 tsp salt

Directions:
Directions:

Roast bell peppers under the broiler, watch peppers, keep turning so to make sure not to burn them. Once
roasted, set aside, cover them with aluminum foil for a few minutes until cool, remove the skin and seeds..
Slice peppers into strips and place in a dish. Add the garlic, parsley, oil, vinegar and salt to taste. Mix
all ingredients well. You can make these peppers hours or a day before serving. It will keep for 4 to 5 days. Serve with meat, chicken or fish.
