Ingredients:  
2 cups diced or sliced, cold cooked potatoes (either baked, boiled or frozen shredded)
1 1/2 cup medium white sauce
Salt
Pepper
Onion (fresh or dried)
1 tsp minced parsley (optional)
1 cup buttered bread crumbs (or a box of stuffing mix)
2-4 TBSP grated cheese

Directions:
Directions:
Preheat Oven to 400º

Combine potatoes, onions, salt & pepper and white sauce.
Turn into a greased 13x9 baking dish.
Top with cheese and bread crumbs.

Bake until crumbs are brown and middle is hot.
