1 1/2 C vegetable oil
2 C sugar
4 eggs
3 C flour
2 tsp baking soda
1 tsp salt
3 tsp cinnamon (generous tsps--I always use a bit more)
2 tsp vanilla
3 C carrots

FROSTING
1 stick of margarine
8 oz of cream cheese
1 Box confectioner's sugar
2 tsp vanilla

Directions:

Preheat oven to 325

First mix oil, sugar and eggs together. (add each egg 1 at a time)
In separate bowl, combine flour, baking soda, salt and cinnamon. Use fork to blend or sift together
Slowly add dry ingredients to the oil/sugar mixture.
Add vanilla and carrots

Spray a 9X13 cake pan. Pour batter into pan and bake for 45 minutes until toothpick comes out clean. Do not remove from pan
Cool cake prior to frosting. Serve cake in the original pan

Frosting prep
soften margarine and cream cheese and then using hand mixer, blend together. Add confectioner's sugar and vanilla. Frost top of cake
