1 cup butter, softened
1/2 cup powdered sugar
1 tsp vanilla (optional)
2 cups flour
1 cup pecan pieces

1/2 cup powdered sugar for coating

Directions:
Preheat oven to 325º. Cream together the butter and powdered sugar. Mix in the vanilla. Add the flour and pecans. Mix together until blended. Shape dough into 1" balls and place on ungreased cookie sheet. Bake 15 - 20 minutes (bottoms will be lightly browned). Remove from oven & let sit for about 5 minutes. Roll small batches in powdered sugar and let cool completely. Roll cookies in powdered sugar a second time.

We always called these sno-balls. Some people call them Mexican wedding cookies. A variation: roll the warm cookies in 1/2 cup granulated sugar mixed with 1/2 tsp cinnamon.
