4 cups of frozen peas, thawed
1 cup diced Cheddar cheese
1 cup celery, diced
1/2 cup pickle relish
1/4 cup red onion, sliced thin and chopped.
1/2 cup mayonnaise
1/2 cup bell pepper, diced
season salt to taste
fresh parsley, chopped, for garnish

Directions:

Add all ingredients to a large mixing bowl. Toss to distribute all ingredients and evenly coat with mayonnaise.
Chill until time to serve. Garnish with chopped fresh parsley.

For an added twist, crumble 8-10 slices of crisp bacon and add to the pea salad. This addition adds a nice flavor and texture to the pea salad.
