Cake:
1 3/4 cup sugar
1 1/4 cup Wesson oil
4 eggs
2 cups plain flour
2 teaspoons baking powder
2 teaspoons soda
1 teaspoon salt
2 teaspoons cinnamon
3 cups grated carrots
1/2 cup nuts
1 small can crushed pineapple

Icing:
1 stick oleo
1 8-ounce package cream cheese
2 teaspoons vanilla
1 box powdered sugar

Directions:
Directions:
Cake: Cream sugar and oil. Add eggs. Sift flour and other dry ingredients and add to creamed mixture. Fold in grated carrots and nuts. Grease and flour three 9-inch pans. Bake at 350 degrees for 25-30 minutes.



Icing: Cream together oleo, cream cheese, vanilla, and powdered sugar. Add enough pineapple juice to make mixture spreadable. Ice layers, putting the drained crushed pineapple between the layers on top of the icing.
