Ingredients:
4 cups Winesap apples, chopped (can use any cooking apple)
2 cups sugar
2 eggs, beaten
1 cup vegetable oil
3 cups sifted flour
2 teaspoons soda
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon cloves
1/4 teaspoon salt
2 teaspoons vanilla
1 cup chopped nuts
(The above is how Clyde made it. If you prefer you may use the following ingredients instead, omitting the spices)
3 cups flour
2 teaspoon soda
½ teaspoon salt

Directions:
Directions:
Chop the apples and pour 2 cups of sugar over them. Let sit 1 hour, stirring occasionally. Add the 2 beaten eggs and 1 cup of oil and mix.
Sift flour and other dry ingredients. Add to above mixture. Mix. Add vanilla and chopped pecans.
Bake in a greased and floured tube pan for 1 hour at 325 degrees. (I use spray Baker’s Joy in place of greasing and flouring the pan)

This is wonderful. I particularly like to make it in the fall and winter.
