2# ground beef
5 eggs
1/4 diced onion
1 cup seasoned bread crumbs
1 12oz can diced tomatoes
1/2 cup parsley
1# baby carrots
6-8 potatoes
**for meatballs
do not use onions or tomatoes; add pine nuts, raisins to taste. Wine

Directions:
Directions:
Mix ground beef, eggs, bread crumbs, onion and 1/2 of can tomatoes together. Season with salt and pepper. Shape into loaf and place in sprayed pan.
In a separate roasting pan, cook carrots and potatoes. Salt and pepper. Add rest of can tomatoes.
Preheat oven @ 400º. Cover and cook vegetables with meatloaf. Check after 1 hour. If too dry, add a little water.

**Meatballs
Do not use onions or tomatoes. Add pine nuts and raisins if desired. Roll into balls dipping your hands in red wine and fry.
