2 large sirloin roasts 1 bunch celery 2# baby carrots
8-10 large potatoes 2 large onions
2 quarts of beef broth or beef stock or beef bouillons
2# frozen ravioli (smaller size) or 2# cheese tortellini
1 -12oz can chopped or diced tomatoes
salt & pepper to taste

**you can also make small meatballs for the soup. Recipe on page 44

Soak roasts in cold water in sink. Change the water until it is clear. Place roasts in large pasta pan covering with water. Clean and cut celery; clean carrots; quarter onions. Add all vegetables to pasta pan.
Salt to taste.
Peel potatoes. Quarter them and place in roasting pan. Drizzle oil over potatoes/season with salt and pepper. Bake in oven at 350º until cooked; cover with foil when cooked.
While potatoes are cooking, skim the top of water with the roasts. When water is somewhat clear, add tomatoes. Add beef broth or stock. Do this gradually not to make it too salty. When meat and vegetables are cooked, take meat and vegetables out of water, placing them in a roasting pan. Lightly season the meat with salt and pepper. Cover all with beef broth; foil and place in oven at 300º for approximately 2-3 hours. Meat should break apart.
When meat, vegetables and potatoes are done, cook ravioli or tortellini in the beef broth until al dente.
Serve soup with Parmesan or Romano cheese.
