1 smaller chicken cut up
2 c. cooked "real" rice (not instant)
1 small can sliced mushrooms
1 smallish minced onion
1 cube chicken bullion w/ 1/2 c.water
or 1/2 can chicken broth
1 good sized casserole dish w/ lid
1 T. fresh cut parsley flakes

Brown cut chicken in some oil in skillet. Remove and drain oil on paper towels. In the meantime, heat oven to 350º. Combine rice, mushroom, onion, parsley, and broth in slightly greased casserole. Put browned chicken around to fit on top of rice mixture. cover and bake 1/2 hour. Test the chicken breast for doneness and check the rice for moisture. Add a little water if needed and bake a little time longer,with lid off,if chicken is
not quite done yet, or rice is too soupy or rice is a bit too "soupy".

There is no recipe for this, nor do we know who "Roger" is. This is made as my Grandma Schnieder from Germany taught me. Maybe "Roger" had a different name in Germany !? My daughter Janine rejoices when we make this for supper with a big green salad.
