1 boneless breast of chicken cut into bite sized pieces
panko crumbs
Olive oil or Sesame oil
chopped ginger (or ground ginger)
chopped garlic
1/2 lb pasta (thin spaghetti, angel hair)
Julienne or thinly sliced vegetables (any combination of cabbage, asparagus, zucchini, onion, peppers, squash, broccoli)
1/2 bottle Asian Simmer Sauce (Orange Manderin, Korean BBQ, etc)

Coat chicken pieces in panko crumbs (see Note below)
Saute in oil over medium high heat. When about halfway through, add diced/minced ginger and garlic.
Move the meat to the edges of the pan, add the vegetables to the center and lightly saute.
Cook pasta and drain.
Add the Simmer Sauce to the meat and vegetables and simmer for 2 to 3 minutes to combine.
Add pasta to the skillet and combine.

I have found if you coat the chicken with panko crumbs an hour or more ahead of time and refrigerate, the panko sticks to the chicken better.
You can also use pork or beef in this recipe, with or without panko crumbs. Great way to use leftovers.
