3/4 c. parmesan cheese
1 large bag yellow tortilla chips (plain)for dipping
1 envelope dry Alfredo sauce (Like McCormicks)
1 pkg frozen chopped spinach (unthawed)
1 can artichoke hearts (chopped)

Directions:
Directions:
Prepare sauce mix per package directions
after you add butter & milk & bring to simmering
Squeeze all the moisture out of the spinach by using paper towels to press hard to drain the water out
Add artichoke & spinach to sauce, then add cheese & stir well
bring to a bubble
bake in 1 qt. casserole dish @ 350º for 15-20 minutes
serve warm with chips

This recipe was hard-won from the Boss's mouth at Applebees'. John & I had to drink 3 Bloody Marys to get him to give it to me as we ordered it as an appetizer. It was a tough job, but someone had to do it!
