2 bags frozen broccoli florets
1 can cream of mushroom soup
chopped onion to taste ( recommend 1 small)
2 heaping tbsp mayonnaise
2 cups (or more) shredded cheddar
Topping:
1 sleeve Ritz crackers
1 stick butter melted

Directions:
Directions:
Preheat oven to 350º
In a large bowl mix together broccoli, chopped onion, soup (undiluted), mayonnaise, cheese.
Pour mixture into a baking dish (see note below)
Topping:
Crush one sleeve of Ritz crackers and combine with 1 stick of melted butter.
Sprinkle over the top of broccoli mixture.
Bake in 350º oven for 45 - 55 minutes depending on the size and shape of your baking dish.

The larger the serving dish, the less cooking time will be required. I recommend 8x8 or 9x13.
Note: if you add cubed chicken and some penne pasta, you have a whole one-dish meal. Just saying ...
