1 lb ground meat - turkey or beef
1 can beans - chili, kidney, black beans - whatever you have
1 can green chilies - optional
1 can corn or equal amount of frozen corn
1 small can (14 oz) chopped tomatoes
1 small onion chopped
1 or 2 peppers chopped - I used jalapeno, but any will do
1 package of taco seasoning (or cumin and chili pepper to taste)
1 package Jiffy cornbread or corn muffin mix
1 egg
1 can creamed corn
sour cream
salsa

Directions:

Preheat oven to 400 degrees.
In a 10 inch or larger oven-proof skillet, cook ground meat and drain if necessary.
Add chopped vegetables and cook until translucent.
Add corn (drained), beans (drained), chilies, chopped tomatoes, cumin and/or taco seasoning and stir.
In a mixing bowl, combine Jiffy cornbread mix, 1 egg and can of creamed corn.
Pour over meat mixture in the skillet.
Cook at 400º for 30 minutes until cornbread is golden brown and cooked through.
Top each serving with sour cream and salsa.

This is a very flexible recipe. Substitutions and additions are welcome.
I use a cast iron skillet for convenience. However, it can be made by pouring meat mixture into a similarly-sized baking dish and topping with cornbread mixture.
