3 T Minute Tapioca
3 T sugar
1 egg yolk
2 T sugar
1/8 t salt
2 c. milk
1 egg white
3/4 tsp vanilla

Directions:
Directions:
Combine tapioca, 3 T sugar, egg yolk, salt and milk in pan. Let stand 5 minutes.
In separate bowl beat egg white until foamy. Gradually add 2 T sugar and beat until the mixture forms soft peaks.
Cook milk mixture over medium heat to a full boil -stirring constantly for 6 to 8 minutes (after boil is reached). Turn stove off. Gradually add egg white mixture. Stir until blended. Add vanilla. Let cool before serving.

When I volunteered at Franklin Center I increased measurements to use the milk that was going out of date in the Franklin Center Store. They served the pudding in the Franklin Center Coffee Shop.
