2¼ cups graham wafer crumbs
2 eggs
1½ cups icing sugar
1 cup crushed pineapple (drained)
½ cup melted butter
½ cup butter
1 cup whipping cream

Directions:
Directions:
1. Mix the graham wafer crumbs with the melted butter.

2. Put half of the crumbs into an 8" x 12" pan, pressing down firmly. (Keep the other half of the crumbs for the topping.)

3. Beat eggs, icing sugar and butter together, and then spread this mixture over the crumbs.

4. Whip the whipping cream, and then fold in the drained, crushed pineapple.

5. Spread the whipped cream mixture over the top of the icing sugar mixture. Top the whole dessert with the rest of the graham crumbs.

6. Place the dessert in the refrigerator for at least several hours. Overnight would be best.

7. Cut into squares for serving.

This dessert will keep for days in the refrigerator.

While Flapper Pie was perhaps our family's favourite dessert, another one that she often served was Pineapple Delight. Not as fussy to make, Mum served it for teas, for special family dinners, and any other occasion that required something a little more special. It was not until the last year of her life that she told me that Pineapple Delight actually came from Auntie Llu's recipe box. Flapper Pie was definitely Mum's recipe!
