4 cups thinly sliced pared potatoes
¼ cup minced onion
3 tbsp. flour
1 tsp. salt
¼ tsp. pepper
¼ cup butter
2½ cups hot milk

Directions:
Directions:
1. Heat oven to 350º (moderate heat.)

2. Arrange potatoes in four layers in an ungreased, 2-quart casserole as follows:

Layer One: 1 cup potatoes topped with 1 tbsp. onion, 1 tbsp. flour, salt & pepper.
Layer Two: Repeat.
Layer Three: Repeat.
Layer Four: Same as first 3 layers, but omit the flour.

3. Dot with butter.

4. Scald milk, and pour over potatoes.

5. Cover casserole, and bake for 30 minutes.

6. Remove lid, and bake for 60 - 70 minutes longer.

7. *Barb's suggestion: Add grated cheese before serving.
