1 1/2 pounds salmon, skinless and boneless
1 lb trimmed asparagus
1/4 cup creme fresh or sour cream
3 to 4 tbsp chopped fresh dill
Zest of 1 lemon
2 sheets Puff Pastry
1 egg, lightly beaten

Directions:
Directions:
Heat oven to 450ºF. Cut tips off the asparagus and poach in salted water for 3-5 minutes. Place in ice cold water. Remove and dry on paper towel. Purée. Mix with creame fresh, dill, lemon zest and season with salt and pepper. Set aside. Lay Puff Pastry on a damp cookie sheet with long edge facing you. Lay salmon on Pastry. Season with salt and pepper. Place raw asparagus on top off salmon like pencils. Spread creame fresh mixture on top. Brush edge of Pastry with egg. Lay the top Pastry on top, pressing edges together. Trim edges, leaving a 1 inch border. Press edge with fork then scallop edges. Make 2 or 3 slits in the top.
Brush all over with egg and bake till golden brown, about 20 minutes. Remove from oven and let cool 5 minutes before slicing. This dish is also good at room temperature..
