Balsamic Vinaigrette:
Extra Virgin Olive Oil
Balsamic Vinegar
Garlic, crushed
Dijon mustard
Freshly ground black pepper
Salt

In a jar with a tight fitting lid, pour the desired amount of olive oil
Add vinegar to the desired proportion
Add garlic, mustard, salt and pepper
Close jar tightly and shake until combined
Dress the salad just before serving

You can modify the proportions based on your own taste. If you're not sure how to begin, start with 1 cup oil, to ¼ to ½ cup vinegar, 1 large teaspoon mustard, 1 small clove garlic, salt and pepper.

⅓ cup olive oil, 3 Tablespoons red wine vinegar, 1 teaspoon lemon juice, ½ teaspoon salt, ½ teaspoon oregano, Black pepper to taste.
