2 tomatoes, cubed
2 Tbs fresh basil, sliced in thin strips
Grated Parmesan cheese
2 tsp balsamic vinegar
2 Tbs olive oil
2-3 cloves garlic, finely diced
Salt to taste
Ground Pepper to taste
Sourdough or Italian Bread (see below)

Directions:
Directions:
Mix tomatoes, basil, olive oil, garlic, vinegar and spices. Chill in refrigerator for about an hour.
Just before serving, prepare the bread.
Slice bread into slices and toast in the oven.
Rub one side of the toast with garlic clove.
Drizzle a little olive oil over each slice.

Spoon tomato mixture over toasted bread, garnish with grated cheese and serve immediately.
